As the daughter of a first-generation immigrant from Okinawa, Japan, fried rice was a staple weeknight dinner. The ingredients are cheap, and it’s fast and easy to make! To mix things up, we would add spam, ham, or chicken, but the one thing that makes fried rice “fried rice” is the scrambled egg.

When we went vegan, fried rice was one of the meals I missed the most. So I came up with my own recipe using tofu scramble! FreshJax Tofu Scramble is a seasoning that makes tofu taste exactly like scrambled eggs! I highly recommend using the mix because it is delicious! However, you can also use my own mix, which I have included in the recipe below, and tweak it to your taste.

I used onion, bell pepper, carrots, and mushrooms, but the possibilities are endless! For instance, you can add broccoli, corn, green beans, any almost any other veggie you can think of!

  1. Start by cutting all vegetables.

  2. Heat frying pan over medium heat. Add in 1/2 tablespoon oil of choice.

  3. Crumble tofu in pan.

  4. Add turmeric for a scrambled-egg color, paprika, garlic, salt, and pepper to taste.

  5. When tofu is crumbled to your liking and resembles the color of scrambled eggs, remove from pan and set aside.

  6. Heat frying pan over medium high heat. Add in 1/2 tablespoon oil of choice and 1/2 tablespoon sesame oil.

  7. Add vegetables that take the longest to cook, such as onions, bell peppers, carrots, and broccoli, if using.

  8. Once vegetables are nearly cooked through, add any remaining vegetables, such as mushrooms or pre-cooked corn, if using, and ginger and garlic.

  9. Cook until heated through and ginger and garlic is fragrant. Make sure not to burn the ginger and garlic!

  10. Add in your pre-cooked and cooled rice. Mix well.

  11. Add soy sauce to taste.

  12. Add in the tofu scramble you set aside earlier. Mix well.

  13. Add additional soy sauce, salt, pepper, and MSG and ground white pepper, if using, to taste.

  14. Heat through and serve.

  15. Top with sesame seeds, if desired.

  16. Enjoy!
