This easy tofu sheet tray is a great way to use up veggies that are about to go bad at the end of the week! The most difficult part of this meal is picking your favorite marinade to use, but that's an easy decision for me! Reed's Italian Dressing is absolutely delicious!

Easy Tofu Sheet Tray Recipe

Ingredients
  • 2 blocks firm tofu
  • 1/2 cup marinade
  • 1.5 lb potatoes, cubed
  • 3-5 carrots, sliced
  • 2 bell peppers, sliced
  • 2 onions, sliced
  • salt, to taste
  • favorite seasoning(s), to taste
  • vegan cheese (optional)
Instructions
  1. Preheat oven to 400° Fahrenheit.

  2. Cut tofu into cubes. Put tofu into bowl and add marinade. Set aside.

  3. Cut remaining vegetables.

  4. Line baking sheets with parchment paper or foil, if you don't have parchment paper. If using foil, spray with cooking spray to prevent sticking.

  5. Put veggies and tofu on sheet tray in an even layer so everything cooks evenly.

  6. Put sheet trays in oven for 40 minutes, turning vegetables halfway through and adding additional marinade if needed.

  7. Divide veggies equally into four servings.

  8. Season with salt and any of your favorite seasonings!

  9. Top with vegan cheese and serve hot!
