These easy-to-make burrito bowls are perfect for meal prep! I love this recipe because I can meal prep for nearly an entire week, and I can adjust the amount of carbs based on whether I’m bulking, cutting, or maintaining by just changing the amount of rice I add to each bowl!

What If I’m Allergic to Soy?

Most TVP is made from soy. If you’re avoiding soy, you can purchase pea crumbles. For example, Longève Brands has a meat(less) crumbles made from pea protein that many people rave about! They rehydrate and cook the same way TVP does, so it’s a perfect swap for this recipe or any recipe on my blog that uses TVP!

Burrito Bowls for Easy Meal Prep – Vegan, High Protein!

Ingredients

Instructions

  1. Rehydrate four cups of TVP with four cups of water.

  2. While TVP is rehydrating, add two cans of black beans and two cans of corn to a saucepan. Heat over medium low heat.

  3. Season TVP with two packets of taco seasoning, 1/2 tsp of paprika, and 1/2 tsp of cumin.

  4. Add olive oil to a skillet and heat over medium high heat.

  5. Once heated, add TVP and cook until excess moisture has cooked out.

  6. Now it's time to build your meals! Start by adding rice or your rice alternative.

  7. Divide your seasoned TVP into each bowl.

  8. Divide your black bean and corn mixture evenly into each bowl.

  9. Top with your preferred toppings. Lettuce and plant-based sour cream doesn't seem to microwave well, so I only added some salsa and hot sauce to mine.

  10. When you're ready to eat, microwave until hot. Store in refrigerator for up to 4 days.

Note

In this recipe, I used a cup of rice in each burrito bowl. If you want a lunch that is lower calories and carbs, feel free to only add half of a cup of rice or to swap rice for cauliflower rice!
